It takes time for high quality wines to mature. Gentle processing combined with slow, controlled and temperature-controlled fermentation preserve the aromas that have matured in the vineyard and are a guarantee for high-quality wines.
The wines are matured in traditional wooden barrels and stainless steel tanks. Our operating philosophy focuses on quality, not quantity.
According to old tradition, the wines are left on the fine lees after racking. This method gives the wine its full taste and balance. In spring, the wines are then gently filtered and bottled.
